Title: Garlic Mashed Potatoes

Yield: 1 Batch
1 lg Garlic head; split in half
- horizontally
1 ts Oil
6 Russet potatoes
1 Sweet potatoes; up to 2
2 tb Margarine
Potato cooking water
Salt; to taste
Pepper; to taste
Chives; to taste
Preheat oven to 350?F. Drizzle garlic with oil. Cover tightly with
foil and bake for 30 to 40 minutes. Let cool, then squeeze out
garlic. This can be done way in advance.
Peel and slice potatoes, cover with water and bring to a boil. Cook 20
minutes until fork tender. Drain, reserving water. Mash potatoes with
margarine and garlic, adding enough potato water back in to bring it
to the desired consistency. Add salt, pepper, and chives to taste.
Use any left-over gravy (made from seasoned, thickened vegetable
stock, leftover potato water, peels from the potatoes and peels from
the garlic) as a basis for the next pot of soup stock.
