4 Zucchini
- (1-1/4 to 1-1/2 lb)
2 tb Onion; chopped
1 tb Margarine
1/2 c Seasoned stuffing
1/4 c Wheat germ; toasted
1 sm Tomato; peeled, chopped
1/4 c Cheese; grated
Blanch zucchini until barely tender. Cut in half lengthwise. Scoop out
pulp. Brown onion in margarine. Chop zucchini pulp with stuffing,
wheat germ, and tomato. Add mixture to skillet and simmer until
reduced. Stuff shells and sprinkle with grated cheese. Bake in 350?F
oven until cheese melts.
